Homemade, wheat bagels for a road trip to New York
Preparation time: 1.5 hours.
Makes about 20 bagels.
Ingredients: 8 cups whole wheat flour, 1 cup ground oats, 3 tsp yeast, 3 cups warm water, 7 Tbsp honey, and 2 tsp salt
Instructions: Mix 4 cups flour, oats, yeast, and salt in a large bowl. Add water and honey. Slowly add remaining flour. After kneading until dough is very elastic, let sit for 10 minutes. Cut the dough into desired number of bagels. Set a timer for 20 minutes and turn oven on broil. Roll dough pieces into balls and begin shaping them by inserting a finger into the middle and pulling it apart. Let the bagels rest on two floured baking sheets for the remaining time on the timer. Broil bagels in oven for 2 minutes on each side. While broiling, begin to boil a pot of water with 1 Tbsp of honey. Place broiled bagels into boiling water for 7 minutes (bagels should not be fully emerged) flipping them once. Let them dry on a towel while you boil the rest. Place back into oven (now at 190 C) for 20-30 minutes or until golden.
